Ingredients

  • 1 teaspoon vanilla extract
  • ¾ cup fresh blueberries
  • For the glaze:
  • 1 cup powdered sugar
  • 23 tablespoons unsweetened almond milk
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a donut pan or line it with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In a separate medium bowl, whisk together the applesauce, almond milk, melted coconut oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Gently fold in the fresh blueberries.
  6. Spoon the batter into the prepared donut pan, filling each cavity about two-thirds full.
  7. Bake for 12-15 minutes, or until a toothpick inserted into the center of a donut comes out clean.
  8. Let the donuts cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
  9. While the donuts are cooling, prepare the glaze. In a small bowl, whisk together the powdered sugar, almond milk, and vanilla extract until smooth. Add more almond milk if needed to reach your desired consistency.
  10. Once the donuts are completely cool, dip the tops into the glaze or drizzle it over them.
