- For the glaze:
- 1 cup powdered sugar
- 2–3 tablespoons unsweetened almond milk
- ½ teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a donut pan or line it with parchment paper.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate medium bowl, whisk together the applesauce, almond milk, melted coconut oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Gently fold in the fresh blueberries.
- Spoon the batter into the prepared donut pan, filling each cavity about two-thirds full.
- Bake for 12-15 minutes, or until a toothpick inserted into the center of a donut comes out clean.
- Let the donuts cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
- While the donuts are cooling, prepare the glaze. In a small bowl, whisk together the powdered sugar, almond milk, and vanilla extract until smooth. Add more almond milk if needed to reach your desired consistency.
- Once the donuts are completely cool, dip the tops into the glaze or drizzle it over them.
