Description

A rich and creamy cheesecake infused with the distinctive flavor of Baileys Irish Cream, set on a chocolate cookie crust and topped with a decadent ganache.


Ingredients

  • 1 ½ cups chocolate cookie crumbs (about 15 Oreos)
  • 6 tablespoons unsalted butter, melted
  • 2 pounds cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup Baileys Irish Cream
  • 1 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour
  • For the Ganache Topping:
  • 1 cup semi-sweet chocolate chips
  • ½ cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine the chocolate cookie crumbs and melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
  3. Bake the crust for 10 minutes. Remove from oven and let it cool while you prepare the filling.
  4. In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
  5. Gradually add the granulated sugar and continue beating until well combined and no lumps remain.
  6. Beat in the eggs one at a time, mixing well after each addition.
  7. Stir in the Baileys Irish Cream and vanilla extract until just combined. Do not overmix.
  8. Sprinkle the flour over the mixture and gently fold it in.
  9. Pour the Baileys cheesecake filling over the cooled crust.
  10. Bake for 50-60 minutes, or until the edges are set and the center is slightly jiggly.
  11. Turn off the oven, crack the door open slightly, and let the cheesecake cool in the oven for 1 hour. This helps prevent cracking.
  12. Remove the cheesecake from the oven and let it cool completely on a wire rack.
  13. Once cooled, cover the cheesecake and refrigerate for at least 4 hours, or preferably overnight.
  14. To make the ganache topping, heat the heavy cream in a small saucepan over medium heat until it just begins to simmer.
  15. Pour the hot cream over the chocolate chips in a heatproof bowl. Let it sit for 5 minutes, then whisk until smooth and glossy.
  16. Pour the ganache over the chilled Baileys cheesecake and spread evenly.
  17. Refrigerate for another 30 minutes to allow the ganache to set before serving.
