A rich and creamy cheesecake infused with the distinctive flavor of Baileys Irish Cream, set on a chocolate cookie crust and topped with a decadent ganache.

- 2 pounds cream cheese, softened

- 1 tablespoon all-purpose flour
- For the Ganache Topping:
- 1 cup semi-sweet chocolate chips
- ½ cup heavy cream
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine the chocolate cookie crumbs and melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
- Bake the crust for 10 minutes. Remove from oven and let it cool while you prepare the filling.
- In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
- Gradually add the granulated sugar and continue beating until well combined and no lumps remain.
- Beat in the eggs one at a time, mixing well after each addition.
- Stir in the Baileys Irish Cream and vanilla extract until just combined. Do not overmix.
- Sprinkle the flour over the mixture and gently fold it in.
- Pour the Baileys cheesecake filling over the cooled crust.
- Bake for 50-60 minutes, or until the edges are set and the center is slightly jiggly.
- Turn off the oven, crack the door open slightly, and let the cheesecake cool in the oven for 1 hour. This helps prevent cracking.
- Remove the cheesecake from the oven and let it cool completely on a wire rack.
- Once cooled, cover the cheesecake and refrigerate for at least 4 hours, or preferably overnight.
- To make the ganache topping, heat the heavy cream in a small saucepan over medium heat until it just begins to simmer.
- Pour the hot cream over the chocolate chips in a heatproof bowl. Let it sit for 5 minutes, then whisk until smooth and glossy.
- Pour the ganache over the chilled Baileys cheesecake and spread evenly.
- Refrigerate for another 30 minutes to allow the ganache to set before serving.
