Description

Homemade Authentic Chinese Scallion Pancakes are crispy, flaky, and flavorful, perfect for any occasion.


Ingredients

Scale
  • 2 cups All-Purpose Flour (Can substitute with gluten-free flour)
  • 1 cup Boiling Water (Ensure it’s boiling for best results)
  • as needed Cold Water (Use to adjust dough consistency)
  • 3 tablespoons Vegetable Oil (Can substitute with sesame oil)
  • 1 teaspoon Salt (Adjust to taste)
  • 5 stalks Scallions (Chopped)

Instructions

  1. In a bowl, mix the all-purpose flour and salt. Gradually pour in the boiling water while mixing with a wooden spoon until the mixture resembles a shaggy dough.
  2. Slowly incorporate cold water, a little at a time, stirring until the dough comes together.
  3. Transfer the dough to a floured surface and knead for 5-10 minutes until it feels smooth and elastic. Cover with a clean cloth and let it rest for 30 minutes.
  4. Divide the rested dough into four equal pieces and shape each into a ball.
  5. On a floured surface, roll each ball into an 8-inch circle. Brush a thin layer of oil over each circle and evenly sprinkle with chopped scallions.
  6. Starting at one edge, roll each circle tightly into a log. Coil the log into a spiral shape and gently flatten it down.
  7. Heat oil in a skillet over medium heat. Cook each pancake for about 3 minutes per side until they turn golden brown and crispy.
  8. Once cooked, drain the pancakes on paper towels. Cut into wedges and serve hot.
