Instructions

  1. In a large pot, mix boneless chicken thighs, minced garlic, grated ginger, sliced scallion whites, kosher salt, freshly ground pepper, and water. Bring to a boil over medium-high heat.
  2. Once boiling, reduce the heat and let it simmer uncovered for about 15 minutes. You want the chicken to be tender and fully cooked, so check for doneness.
  3. While the chicken simmers, whisk together the black rice vinegar, soy sauce, and toasted sesame oil in a bowl. This flavorful drizzle is key to enhancing your soup.
  4. Remove the cooked chicken from the pot and shred it using two forks. Set it aside to keep warm, ready to be added back later.
  5. Add the dried ramen noodles and carrot matchsticks to the simmering broth. Cook for about 3-4 minutes, until the noodles are tender but still have a bit of bite.
