Ingredients

  • 1 teaspoon Baking Powder (Check for freshness)

  • 1/2 teaspoon Salt (A small pinch enhances flavors)
  • 8 ounces Cream Cheese (Use block for best texture)
  • 1/3 cup Granulated Sugar
  • 1 teaspoon Vanilla Extract (Almond extract is a good alternative)
  • 1/4 cup Spiced Sugar (Roll cookies in this mixture)
  • 1 teaspoon Ground Cinnamon (Adjust according to your taste)
  • 1/4 teaspoon Nutmeg & Allspice (Customize based on preference)

Instructions

  1. Prepare the cider reduction by simmering apple cider over medium-low heat until reduced to about 2 tablespoons (25-38 minutes).
  2. Make the cheesecake filling by beating cold cream cheese with sugar and vanilla until light and fluffy, then spoon onto a sheet and freeze.
  3. Mix dry ingredients by whisking together all-purpose flour, ground spices, baking powder, baking soda, and salt.
  4. Cream the butter and sugars with an electric mixer until fluffy and pale (2-3 minutes).
  5. Combine wet ingredients by adding cider reduction, egg yolks, and vanilla extract into the butter mixture.
  6. Add dry ingredients gradually and chill the dough in the refrigerator for about 15-20 minutes.
  7. Form cookies by scooping dough onto a baking sheet, adding cheesecake filling, and sealing it.
  8. Bake cookies at 350°F (175°C) for 11-12 minutes until lightly golden, then cool on a wire rack.
  9. Apply spiced sugar topping by brushing cookies with melted butter and sprinkling sugar mixture.
