Instructions
- Prepare the cider reduction by simmering apple cider over medium-low heat until reduced to about 2 tablespoons (25-38 minutes).
- Make the cheesecake filling by beating cold cream cheese with sugar and vanilla until light and fluffy, then spoon onto a sheet and freeze.
- Mix dry ingredients by whisking together all-purpose flour, ground spices, baking powder, baking soda, and salt.
- Cream the butter and sugars with an electric mixer until fluffy and pale (2-3 minutes).
- Combine wet ingredients by adding cider reduction, egg yolks, and vanilla extract into the butter mixture.
- Add dry ingredients gradually and chill the dough in the refrigerator for about 15-20 minutes.
- Form cookies by scooping dough onto a baking sheet, adding cheesecake filling, and sealing it.
- Bake cookies at 350°F (175°C) for 11-12 minutes until lightly golden, then cool on a wire rack.
