Amish Snow Day Soup is a medley of hearty vegetables that brings comfort and warmth during chilly winter days.

- 1 can Diced Tomatoes (provides acidity; fresh works well too)
- 4 cups Vegetable/Chicken Broth (opt for low-sodium if preferred)
- 1 teaspoon Dried Thyme
- 1 teaspoon Oregano

- 2 cups Cooked Egg Noodles/Pasta (swap with zucchini noodles for lighter version)
- 1 cup Heavy Cream (optional; substitute with coconut milk for dairy-free option)
Instructions
- Heat Olive Oil in a large pot over medium heat. Add diced onion and sauté for about 5 minutes until translucent and aromatic.
- Add minced garlic, chopped carrots, and celery. Sauté for another 5 minutes, stirring occasionally, until tender and fragrant.
- Incorporate cubed potatoes, corn, and diced tomatoes. Stir until well blended.
- Pour in broth, sprinkle with dried thyme, oregano, salt, and pepper. Bring to a boil, then reduce heat to simmer for 20 minutes.
- Add cooked egg noodles and heavy cream (if using). Warm through for an additional 5 minutes until everything is heated and combined.
- Taste and adjust seasonings. Serve hot, garnished with fresh parsley.
